The Pond Restaurant’s New Signature Dish “ayam Betutu”

The Pond Restaurant at Discovery Kartika Plaza Hotel, has recently introduced its new signature dish. The Ayam Betutu is a traditional Balinese dish of steamed or roasted chicken or duck in rich bumbu betutu, a Balinese spice mix. The restaurant had selected the Ayam Betutu due the authenticity of the dish and its direct link to the Balinese people and the island. The Pond’s Ayam Betutu was also put to the test against the same dish with three other restaurants and it came out on top. By wrapping the chicken in banana leaves, the moisture is kept in and the meat doesn't dry out. The meat is first grilled with fire from coconut husks and then braised with spices for more than 2 hours in a traditional earthenware pot before being presented to hungry guests at the table with steamed white rice and a trio of Balinese sambal.
